How to make Soho House São Paulo's case verde

Both sweet and spicy, our Casa Verde cocktail puts a twist on the Brazilian classic Caipirinha. Here, the bartenders at Soho House São Paulo share how to recreate it at home

Passion fruit and green chilli syrup

Make the passion fruit and green chilli syrup used in this cocktail ahead of time; this will keep for up to two weeks in the fridge.

Ingredients

250g passion fruit puree

175g caster sugar

20g green chilli, gently crushed

Method

1. Warm the puree and sugar in a pan over a low heat.

2. Once the sugar is dissolved, add the green chilli.

3. Once cooled, remove the chilli and store the syrup in an airtight container until ready to use.


Casa Verde

Ingredients

Half a lime

20ml passion fruit and green chilli syrup

35ml sake

15ml Leblon Cachaça

10ml BACARDÍ Coconut rum

1 green chilli top to garnish

Method

1. Add the lime to a shaker, muddle and remove.

2. Add the rest of the ingredients to the shaker, other than the chilli top. Shake with four or five cubes of ice. Pour into a Rocks glass and top with extra ice.

3. Garnish with the green chilli top.
